Socca Recipe

Socca (great accompaniment for soups, salads, curries, stews – anything!) 1 cup chickpea flour (aka gram flour) 1 cup of filtered water 2 tbsps olive oil ½ tsp salt 1 tsp of cumin or rosemary ½ tsp tumeric (optional) 1 crushed clove garlic (optional) Mix the above ingredients together and soak for at least half an hour. Heat a frying pan, adding a further spoon of olive oil. When sizzling hot, pour in some of the batter as thought making a pancake. Cook for 2 mins on a medium heat on both sides.
